ALDER is a first-rate wood, harvested in the north-west of the United States. It was used by the American Indians to smoke fresh salmon. It bestows a full but soft aroma. It can also be mixed with the wood of fruit trees, which results in a very interesting aroma.
Use with: fish, poultry, meat, tofu and tempeh.
